I’m a Florida wind surfing baby who grew up cruising the warm waters of Biscayne Bay but my current incarnation is in the Dallas/Ft. Worth metroplex as a teen counselor by day and a plant based caterer in my spare time. My passion is teaching omnivores how to make friends with their kitchen appliances and transition to a life with plants. The route to vegan cooking was a circuitous one, though. Two masters degrees and several student loans later, I’m now cooking scrambled tofu hash in the mornings for the barbecue loving teachers in my school and sponsoring a vegan student club and potluck lunches in the afternoons. Watching my high school students step forward into their happy adult lives is endlessly entertaining (and just a little heart breaking) but I live for the weekends and the thrill of seeing sick, miserable people in my cooking classes do a 180 from chronic disease. In the past six months, we’ve tackled Diabetes Type 2, high cholesterol, heart conditions and arthritis and that’s just the beginning! I am “plant strong” through my fledgling business, VegOut Catering, and am also a nine year Bikram yogini, gym warrior, urban gardener, greyhound mama and online journalist.
