Paul Fisichella

Paul Fisichella, a restaurant manager with nearly 20 years of experience in his field, has a proven track record of increasing profits and cutting costs. Most recently, Fisichella served as General Manager for RM Seafood in Las Vegas, Nevada. Responsible for the day-to-day operations of Celebrity Chef Rick Moonan's signature restaurant brand, Paul Fisichella controlled all front of house and back of house operations for the restaurants.

At RM Seafood, Paul Fisichella observed day-to-day operations and compiled detailed profits and loss data. He implemented strategies to increase sales without significantly increasing expenses. As a result of his data analysis, staff training, and oversight, RM Seafood increased average sales per check by 32%. In addition, he increased the company's gross by $2.4 Million a year and increased the net income by 50%.

Paul Fisichella also achieved excellent results at Wynn Resorts in Las Vegas, where he served as the General Manager for Stratta Restaurant from 2007 to 2010. Working with more than 150 employees covered under a collective bargaining agreement, Fisichella increased net sales by $1.6 million dollars a year. He also decreased staff and food expenditures as a percentage of the gross earnings.

In the past, Paul Fisichella served as a General Manager for MGM Resorts Mandalay Bay Hotel and Casino in Las Vegas, where he oversaw 220 unionized employees operating food and beverage units which grossed $11 Million between June and October each year. At Mandalay, he oversaw the turnaround of Raffles, a cafe which he transformed into a profit center.

Paul Fisichella holds a Bachelor of Arts in English Language and Literature from the State University of New York at Stony Brook. Before moving to Las Vegas, he owned and operated Finnegan's Pub and Restaurant in Huntington, New York. Fisichella is proficient in several restaurant management software programs, including Avero and Infogenesis.
