Wayne Alexander

I started my work career when I was only thirteen years old, working in mom and pop computer shops. At the time I had a passion for computers and accepted wages in computer parts. I ultimately worked into a paying position for a larger local technology company in Charleston, SC.

After time I felt the need for a career change and had a passion for food. I enrolled in Florida Culinary Institute in West Palm Beach, FL where I graduated with an Associated of Science degree in Culinary Arts and a Bachelor's Degree in Culinary Management.

During my time in College I had only two back of the house positions over a three year period honing my Chef skills. My later position placed me in a Chef roll at a Delray Beach country club, where I then found the Front of House management experience enticing by helping out the Food and Beverage Director.

After spending time out of college and working at the country club, I learned about a training program from MGM Resorts International in Las Vegas called the Management Associate Program. I conducted my training at Monte Carlo Resort & Casino after which I was hired as an Assistant Manager where my duties included; opening the Pool for the 2008/2009 season, assisting in the Cafe, In Room Dining, Buffet, Beverage and the Pub over the course of three years.

I then went on to the Wynn Las Vegas Buffet for a short stint before landing at New York-New York Hotel & Casino as the Assistant Beverage Manager. I needed to sharpen my management skill set in the beverage field. During my time at New York-New York I was in charge of scheduling for over 150 employees, running the swing shift floor and finishing projects of upcoming menus/specials and marketing campaigns. Toward the end of my time there I was promoted to Beverage Manager; overseeing the ordering and sanitation of nine bars. During this time I was also the Manager at Rok Vegas Nightclub.

I have recently added and am currently enjoying my new position of Restaurant Manager at Grand Lux Cafe inside the largest Five-Diamond Resort Casino; The Venetian. And I cannot wait to see what is in store for me next.
