Global Experience: Jean-Luc's Early Career

After receiving degrees in cooking, pastry and restaurant floor management from École Hôtelière – Jean Drouant, France’s premier professional cooking school, Jean-Luc ran a hotel restaurant and became a karate champion in the French military before joining Club Med. As the Food & Beverage Manager, Jean-Luc managed operations at several of the resort’s locations including the Bahamas, Brazil, France, Morocco, Portugal, Switzerland and the United States. This experience in food services eventually led Jean-Luc to New York City, where he partnered with two friends and opened Trois Jean Restaurant in 1992. The French bistro and pastry shop became a sensation that became a $2.2 million sales business with 40 employees and an international reputation. After selling the restaurant in 2000, Jean Luc founded a consulting and management company that brought him to Florida.
