He was active in student leadership, music, and academic organizations throughout his school years, and his performance background later expanded into opera, musical theater, and stage work across major cities in the United States and Canada.

Mitchell pursued extensive studies across multiple disciplines, including Culinary Arts, Finance, International Business, Business Administration, and Law, earning multiple degrees, including an MBA and a Juris Doctorate. His educational path reflects a lifelong commitment to growth, versatility, and applied knowledge across industries.

Career

Mitchell’s early professional experience included work in finance and corporate law, with roles connected to institutions such as Mellon Bank, Wachovia Financial Services, Leaf Financial Corporation, IKON Office Solutions, and Merit Capital. Over time, he built a broader entrepreneurial platform that combined business ownership, operational leadership, and strategic development.

He is the founder and CEO of Monarca Food Group, Inc., a hospitality company focused on creating experiences through restaurants, eateries, cafés, and related food concepts. Through this work, Mitchell has emphasized quality, diversity, and cross-cultural connection through food and community-centered experiences.

He also co-founded Arbol Eatery in Uptown Charlotte, where he helped shape a concept recognized for fresh ingredients, global inspiration, corporate catering, and community-centered events.

Mitchell is also the founder of Mitch Coles Real Estate, Inc., a founder-led, multi-strategy real estate investment platform serving sellers, investors, and strategic partners through acquisitions, investor strategy, private capital, integrated real estate services, and education. His real estate work is rooted in direct market experience, disciplined execution, and long-term value creation.

Legal and Advocacy Work

Mitchell’s background in law includes experience across corporate law, civil litigation, criminal defense, appellate law, family law, real estate, and tax law. He has used that legal foundation to strengthen his business ventures, guide strategic decision-making, and support others navigating complex systems.

His advocacy work reflects a deep commitment to justice, opportunity, and community reintegration. He has supported underserved and marginalized individuals, including those transitioning back into society after long-term incarceration. He has also served as a Guardian ad Litem, advocating for children and families in need of support and protection.
