That's how it feels when I eat pili nut kernel.
2 years ago, we visited a farm. We stayed at a tree house and that tree house was built in the trunk of a pili tree. My brother started picking pili fruits on the ground. In my curiousity i picked one and tried to break it. I did. I was able to unshell the fruit and tasted a fresh pili nut. It is indeed a one of a kind experience.
You are not a Bikolano if you haven't eaten pili. And if you're a tourist, you will not leave Bicol region without bringing a handful of pili delicacies. In Bikol, we just call it pili referring to the edible nut. Often called a nut but is technically a drupe. Pili nuts are uniquely Pinoy. Pili nuts is purely Bicolano.Despite the fact that pili is already grown in other places in the country like in Negros Occidental – pili is still identified with the Bicol Region. Pili nuts have that exotic taste not found in other nut products. We can say good bye to almonds , chestnuts, hazelnuts and walnuts. Why not,Pili? I can boldly say that our very own pili has its export quality .
Economically, the pili nut kernel is the most important part of the fruit and has many uses. When eaten raw, it is crispy and has a delicious flavor. It is also eaten roasted, fried or sugar-coated. It is frequently used as an ingredient in cakes, puddings and ice cream, and when cooked in syrup, makes a good preserve. The roasted kernel is sometimes used in chocolate-making. It is also rich in oil, which is suitable for culinary purposes.
I've seen how business offering pili products flourished here in Naga City. In a local mall, 2 establishments are offering pili products and related pastries. Also , in the market, a lot of small time business are growing offering the same product to tourists and locals. For the past few years, the sale of pili sweets have risen to a phenomenal level. All kinds of pili sweets including but not limited to pili with garlic, roasted pili, toasted pili, pastillas de pili, pili tart, crispy pili, pili cake, pili with sesame, suspiro de pili, molido, and mazapan.
