Instant coffee is basically made by removing the water from coffee. The best instant coffee is made from freshly roasted and ground coffee beans brewed into a vat of very concentrated coffee. The water is removed either by spraying the liquid into very hot air or by freezing and then drying it in a vacuum. The result is then crushed into the familiar looking powder we dissolve in our mugs of hot water. Freeze drying produces a better instant coffee as too much heat gives coffee a bitter taste.
