Thanks for visiting my page. My name’s Beth, I’m 24, and I’ve recently qualified as a Paediatric Nurse. I started my instagram account a couple months ago and thought it was about time I started my own blog, so I can share all my recipes with you all! Thank-you to all my lovely followers for all the love & inspiration – you are amazing.
Just so you know ALL my food is gluten free & vegetarian. My diet is mainly plant based and I love vegan dishes. However, I suffer from a few food intolerances, so have to be very careful with certain sugars, such as lactose, and I am currently experimenting with the low FODMAP diet (a diet recommended for those with IBS). I’m still trying to learn more about this diet, and will include a post on what exactly I mean by low FODMAP later on.
Healthy living/ eating has become so important to me, especially over the past year. I’ve recently been diagnosed with superior canal dehiscence (a rare ear condition), which has left me dizzy and off balance constantly. Sadly I can’t fix this with healthy eating, but I strongly believe that eating a balanced diet will at least keep me nourished and give me as much energy as possible until I’m better. As well as this, I am also finding a new found love for cooking/ baking. I even considered applying for the Great British Bake Off, but it’s probably a good thing that the applications had already closed….. !
