Born in Cleveland, Ohio and raised in Wilmington, Delaware, Chef Wit “Thai Guy” Milburn is a highly recognized culinary entrepreneur known for helping spark Northern Delaware’s food truck revolution through his bold Thai-fusion concepts and innovative street food culture.
Originally pursuing a future in football, Wit’s athletic career was cut short after a shoulder injury redirected his path toward the culinary world. He attended Delaware Technical College and Wilmington University, studying restaurant management and marketing while sharpening the natural cooking talent passed down from years of training alongside his mother and grandmother.
Known for blending traditional Thai DNA roots with creative modern flavors, Chef Wit built his reputation through unique rice and noodle dishes that fused authenticity with innovation. His worldwide travels enhanced his culinary creativity, allowing him to incorporate global flavors and techniques into his cuisine while still honoring his Thai heritage. Over time, this evolution of flavors and influences helped Chef Wit develop his own signature culinary style known as “Pacific Rim” cuisine — a bold fusion of Thai foundations with inspirations gathered from cultures and flavors around the world.
Chef Wit later became Executive Chef of Ubon Thai Cuisine before launching several influential mobile dining concepts, including Kapow Food Truck and Kapow Kitchen, while also becoming a partner of Ubon Thai Kitchen. His food trucks quickly became staples of Delaware’s culinary scene and helped redefine the region’s mobile food movement. Kapow, in particular, became an iconic brand recognized for its energy, creativity, bold flavors, and loyal following.
As his career evolved, Wit and his wife grew their vision into three award-winning restaurants, two successful food trucks, and a medium-scale catering operation that became well known throughout the region for unforgettable food and community-driven experiences. Chef Wit’s culinary journey and businesses have been recognized through numerous articles, media features, interviews, and video spotlights that showcase his influence on Delaware’s evolving food and mobile dining scene. After years in the culinary industry, Chef Wit officially “retired his knives” in 2025 and relocated to Cary, North Carolina, to begin a new chapter focused on health, performance, and entrepreneurship.
Today, Chef Wit is the founder of Kapow Fuel Co., a lifestyle nutrition and performance brand built around the idea of “fueling your inner warrior.” Combining his culinary creativity with fitness-focused nutrition, the company features products such as high-protein Kapow Kookies, coffee, sauces, and workout supplements — all designed to deliver bold flavor with purpose and performance in mind.
