Cold Brew in Jakarta, Indonesia
Cold drip coffee is a coffee extracted over long period of time (usually 8-12 hours) using cold water. The water slowly drips over freshly ground coffee extracting the coffee flavor without the need for heat. The absence of heat in the process eliminates the burning of oils, acids, fatty acids and other unpleasant substances leading to a smoother flavor profile compared to espresso (a pH of 5.48, versus 6.31 for cold-process coffee). Once extracted cold drip is best experienced over ice or with milk. It’s a pure cold coffee beverage straight from the coffee beans minus sugar and other additives.
