A native of Gifu City, Japan, and graduate of the Gifu Commercial and Business High School, Eiji Mori emigrated to the United States when he was 20 years old with a desire to succeed in the restaurant and hospitality sector. Eiji Mori began his career with California's Innovative Dining Group (IDG), and went on to serve as general manager of Katana Sushi and Robata Bar as well as sake sommelier for all IDG restaurants. He has since gained progressive certifications in sake fundamentals and food pairing from the Sake Education Council, Sake World, and the Sake Service Institute.
For the past three years, Eiji Mori has served as executive general manager of Newport Beach's Sushi Roku, where he leverages his Japanese heritage and extensive experience in sake pairing to provide customers with an authentic and memorable dining experience. Under Mr. Mori's leadership, the restaurant offers a variety of sakes from the traditional Daiginjo, Ginjo, and Junmai to flavored and sparkling varieties.
