As a student of Traditional Chinese Medicine, I am always interested in natural ways to benefit my health and the health of my patients. I have spent almost the past four years buried in traditional Asian philosophies surrounding the human body. Among my courses, Eastern Nutrition grabbed my interests, and I began integrating my love for food with my new understanding of the energetic and healing properties contained therein. Fermented foods particularly attracted my attention; maybe it's the fact that they seem to enhance just about any meal, or maybe it's simply the added nutritional content and gastrointestinal benefits. But to be truthful, I think it's really that fermenting foods is like conducting science experiments that you can EAT!
