Ordinary store-bought ginger is great for beginners, but you can also order from mail-order catalogues more exotic types that grow up to 6 feet tall with large colorful flowers.
Harvest as much as you want, as long as you put a budded piece back to grow a new plant.
Get yourself a small (think finger joint sized) piece of good quality ginger: fat, firm, aromatic, and with numerous buds. The best kind of ginger, of course, is grown organically without pesticides.
