At Maui Cheese Company, Inc, the cheese is made only with Hawaii Island’s cow’s milk, coming from two dairy farms; “island dairy” and “Clover leaf Dairy”. The milk is pasteurized by Meadow gold, a local dairy processing plant. The milk is specially processed, it is non-homogenized, also called “cream top”, and pasteurized at lower temperatures than the other milk.
