I am a professional chef, nutrition coach, food writer and a healthy lifestyle activist with a strong interest in prevention nutrition through a whole foods plant-based diet. I advocate a diet rich in a wide variety of organic, nutrient rich foods that provide the human body with vitamins, minerals, healthy fats, proteins and fiber. I believe it is better to avoid animal proteins, sugars, refined starches and synthetic additives. It is my opinion that a healthy plant-based diet along with daily physical exercise greatly decreases our chances of being subjected to a degenerative illness or disease. I have cooked in some of the best restaurants in the world here Spain. El Bulli with Ferran Adria, Arzak in San Sebastian, Candid in Segovia, Nodo in Madrid. I have spent 6 months cooking in both London and Italy. I was sous-chef at Il Buco in NYC and Executive Chef at Alison´s in Bridgehampton, NY. I am currently working on opening up a sustainable restaurant here in Mallorca and on April 1, I will start the making of a documentary that focuses on me only eating and drinking what is naturally found here in the Balearic Islands for a time span of one year.
