Scientist and Food Passionate

I hold a degree in Organic Chemistry from the Universidad Autonoma of Madrid. I conducted my PhD research at the Laboratory of Molecular Interactions at the Collège de France and the Laboratory of Analytical Chemistry at AgroParisTech under the supervision of Prof. Hervé This.

My PhD work was awarded with the Silver Medal of the French Academy of Agriculture.

In 2008, I was appointed Network Scientific Officer of the Irish Phytochemical Food Network in Teagasc, to develop a network of scientists working with phytochemicals in a farm to fork approach.

I have experience working with Michelin Starred Chefs, food SMEs and have appeared on Master Chef Ireland.

I am member of the Editorial Board of the Journal of Culinary Science and Technology.

Currently I am R&D Programme Manager in Food Science and Technology for Monaghan Mushrooms, in Co. Monaghan.

I am passionate about Science, Food, Innovation and Technology Transfer.
