An appreciation and respect for the wilderness is something I've cultivated over the past five seasons of working on the waters of Southeast Alaska and BC. As Head Chef or Pastry Chef, I prepared and served wild Alaskan seafood and wild edible plants to guests on small expedition charter boats which fed my spirit. Every hike I led had some focus on edibles of the forest or beach. In my mind, the natural world and the culinary world couldn't be separated, especially when crunchy Sea Asparagus and vibrant Salmon Berries can be a delectable addition to a meal. It has been a blessing to share the wilderness experience and to taste the accent marks of what I believe to be one of the most beautiful places in the world. I arrived to culinary school from the world of Outdoor Education full of Naturalist and Agro-Ecology work. After honing organic gardening skills in Europe, Asia and North America, I found the fresh, local produce flavors and vibrancy to be an inspirational culinary experience. During breaks from boat work, I've been known to visit un-motorized villages and go crabbing, fishing and making kelp pickles and chips along with delicious, vibrant, healthy cooking with friends. Hiking with adventure minded people leads me to believe anything is possible. Hand-crafting delicious edibles of sweet pastries and savory breads while also ranging to fresh seafoods and colorful salads for all the spectrums of diets from gluten free, vegetarian and vegan are all within my expertise. Combining my passion of wild edibles, gourmet foods and wilderness guiding is a connection I always want to bridge. Thanks for visiting!
