Another culinary gem from IHM-A, MANEK SINGH, loves the regional cuisine India has to offer. He knows that the pace is different, systems can be different but the joy of food is, it brings people together, unites them and chefs at times have a common language. His role models in the kitchen being Chef Tim Byres and Chef Colin Fassnidge, Manek aspires to be like them and possibly learn all they have to offer. This National level tennis player balances the cuisine aspect of his life with his passion for photography and his lens covers just about everything from food to landscapes all the way to portraits, he also enjoys trekking and mountain biking in order to occasionally capture uniqueness of the natural world in monochrome. And yes his friends will tell you that, his day doesn’t start without playing songs specifically by the British Rock band Coldplay. Manek belongs to a background where his forefathers to his father gave their lives to preserve the safety of India and this tradition continued until Manek choose to work for the hospitality industry instead and his travelling across the country adds to being in this field. Where his true interest lies is the cooking methods of smoking several meats and ingredients. Post studying in the heart of Texas, USA (origin of smoke cooking), and his dream is to start his own smokehouse in India and apply his own twist to it. ‘Cooking means the world of happiness. To me, it is the true essence of living life the way I always wished to’, he says
