Hello! My name is Margaux and I am a senior at Northeastern University in Boston, Massachusetts. I study corporate communications and I currently work (or co-op) at The Boston Consulting Group where I help the email marketing team.
A couple of months ago, I had a 15 page research paper looming over my shoulders and all I had in my word document was a lousy paragraph about the wonders of organic food. As I was procrastinating one fine afternoon, I came across the documentary Forks Over Knives - and let me tell you - it completely changed my life.
It opened my eyes to all the negative effects of dairy and meat in our diet and it encouraged me to adopt a more holistic approach to eating. I began to notice how much meat we consume on a daily basis and I slowly weaned myself off of it. Compared to contrary belief, it was a lot easier than you might expect - especially if you consider my obsession with filet mingon and hamburgers. Dairy, on the other hand, was quite the challenge. I still struggle with cheese. I love cheese.
However, the results of not eating meat and limiting dairy have been amazing. I lost weight, cleared my skin, and increased my energy. I also feel like I have reduced my carbon footprint because I no longer contribute to the slaughtering of animals. Overall, it has easily been the best decision of my life.
Hopefully my blog will encourage you to reconsider your eating habits, and maybe even persuade you into veganism!
