Mark Seyfert
While working for Bob Evans Farms of Columbus, Ohio, for only four years, Mark Seyfert of Stillwater, Oklahoma, holds the distinction of earning two promotions. Mark Seyfert began with Bob Evans Farms in 2006, after working as a Research Assistant for a number of years at his alma mater, Kansas State University, where he received his Master’s Degree in Food Science. At Kansas State, Mark Seyfert oversaw the university’s Meat Color and Chemistry Labs, exposing himself to the inner workings of commercial meat processing operations through color, microbial, and sensory research. During this time, Mark Seyfert developed educational materials relating to meat sciences, and published more than 20 manuscripts in such scientific journals as the Journal of Food Science, the Journal of Agricultural and Food Chemistry, and Meat Science. His background made Mark Seyfert an ideal candidate for the job of Food Technologist with Bob Evans Farms. Working in this capacity, Mark Seyfert helped to create new food products, such as refrigerated precooked proteins, refrigerated vegetable-based side dishes, and frozen breakfast items, while enhancing and reformulating existing items on retail shelves. Additionally, Mark Seyfert performed research into the shelf life of food items, and implemented a new specification system for Bob Evans Farms. After only one year in this position, Mark Seyfert became Senior Food Technologist and in 2009, he became the Quality Assurance Manager for copackers and suppliers. As a Quality Assurance Manager, Mark Seyfert oversees the distribution of food ingredients to production facilities, and performs shelf life, sensory, and other scientific testing to ensure a high-quality product that complies with Global Food Safety Initiative (GFSI) regulations and all Bob Evans specifications. Through his hard work, Mark Seyfert has improved the quality and safety of food ingredients while helping to increase profits for Bob Evans Farms. When not working with Bob Evans Farms, Mark Seyfert resides in Stillwater, Oklahoma, where he enjoys reading, going home to his farm, KSU sports, and spending time with his wife and dogs.
