When I was growing up, I experienced horrible stomach pains. My mom was a nurse and you know she tried everything possible to find a medical answer for me. The doctors eventually did a scope to find the physical cause of the problem. Unfortunately, even that test brought no answers. I struggled to simply deal with my stomach pain. At this point, I didn’t understand what was wrong, but I would learn. Even though I felt stuck, I resolved to stop complaining and live my life. Life moved on and I dealt with it.

Because of my husband’s work, we moved to Korea. Ah, Korea. The people, the culture, the food. Oh, the stuffed pretzels, the noodle shops everywhere with their incredible homemade noodles. This was bliss. Until the day I found myself rocking in pain and nearly passing out while eating out at a local restaurant. It was excruciating. Thankfully, my daughter was with me and she managed to get me home. Three or four days later and I was still incredibly ill. My husband brought me to the E.R. The IV pain medication barely even touched the pain. The doctors wanted to do another scope, but I already did that and wasn’t willing to do it again.

I decided to start my own month long elimination diet and ended up learning wheat was not my friend. The next step was to start some research and find out what I could eat that didn’t include wheat. I soon came to realize the problem was not only wheat, but other grains as well, including rice.

My research, and my own health changes, only whetted my appetite to learn all I could about nutrition and how intensely it affects our health. I wanted the real information, not just common knowledge. There are so many commonly held beliefs about nutrition that are myths at best, and lies at worst.

The more I researched, the more questions I had. I went back to school to learn the science of nutrition.
