Whiskies are spirit drinks produced from the distillation of fermented cereal mash. The resulting distillate then undergoes a period of maturation in oak casks. In relation to many other spirit drinks, whiskies have complex flavour characteristics. These are not added, rather they are created naturally through the various stages of whisky manufacture. Whiskies are produced across the globe, some of the best known whisky-producing countries being Scotland, United States of America, Canada, Ireland and Japan. For the purposes of this chapter the nomenclature ‘whisky’ has been selected for use. As a result of regional differences in production methods, whisky, although clearly distinctive from other spirit categories, encompasses a wide range of flavours and styles. It is vital that manufacturers are able to monitor and control the sensory attributes of their products, in order to ensure that they consistently meet consumer expectations. Although analytical techniques have been developed that can provide data on levels of certain flavour compounds, there are currently no instrumental measures available that can give a full picture of whisky flavour. Consequently, sensory evaluation is used as the primary means of flavour control in the industry. This chapter describes the origins of flavour in whisky and the typical sensory methods used both during production and in consumer research. Whisky in North America has a long and varied past. Production methods are steeped in history and tradition while producers continue to innovate to meet market needs and continue to advance technologically in terms of production efficiencies and sustainability. They are constantly mindful of upholding tradition and honouring the past. The future for North American whiskies is attractive. Domestic sales continue to grow as existing producers diversify their product ranges to appeal to consumer demands as new whisky distillers come into being through the explosive growth of craft distilling in North America. Export sales are anticipated to continue to escalate and new consumers are expected to come into the whisky category as interests in all types of whisky worldwide continue to flourish.
