- ⅛ tsp ground black pepper
Instructions:
- Prepare the chips:
- Wash and peel potatoes if desired. Slice very thinly (about 1/16 inch) using a mandolin or sharp knife.
- Rinse slices in cold water to remove excess starch. Pat dry thoroughly with paper towels.
- Fry the chips:
- Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
- Fry potato slices in batches, stirring gently, until golden and crisp (about 3–4 minutes).
- Remove with a slotted spoon and drain on paper towels.
- Make the seasoning:
- In a small bowl, mix tomato powder, powdered vinegar, sugar, paprika, onion powder, garlic powder, salt, and black pepper.
- Season the chips:
- While chips are still warm and slightly oily, sprinkle seasoning evenly over them.
- Toss gently to coat all chips thoroughly.
