Hi, my journey began about 17 years ago. My body's been fighting me longer than that. It's tough living with IBS, constant stomach aches, depression, and pain.
My goal is to educate anyone turning to healthier living through food adjustments, help you, my audience, with encouragment and ideas about eatiing wheat free.
Since going wheat free again (found out the first time 17 years ago that I was wheat intolerant. I learned to eat wheat free and was amazed at how much better my pain and IBS was. I ate wheat-free for several years and eventually realized that it was BLEACHED wheat that caused most of my symptoms. My favorite change is my fibro-fog or brain-freeze is going, going, gone!
Then I came across the book, "Wheat Belly" and was convinced that I needed to go back to eating wheat-free and avoiding as many GMOs and I can afford. The biggest difference I've seen is that my husband (type 2 diabetes) is on board with me and his glycemic index has dropped down into acceptable (125-140) on a consistent basis. He's also losing wheat which he's been fighting for years! He's just about to say goodbye to his size 38 pants (already 40s are too big) and is really close to a whole new wardrobe where smaller shirts and size 36 pants reside!
I want anyone to feel free to contact me if they are just beginning to eat gluten-free, wheat-free, IBS diet suggestions and recipe conversions. I want to help. I am disabled due to chronic fatigue so I'm home all day and want to feel useful. It has been a blessing creating my WordPress blog, but its not enough. I want to interact with the world, to help others feel less scared about changing their eatiing habits.
