Phoebe Parros is a cheesemaker with an interest in sustainable systems and artisanal production.
Phoebe is currently part of the cheesemaking team in Paso Robles, CA at Central Coast Creamery and has worked at Twig Farm in West Cornwall, VT.
Parros studied butter & cheese production in France under several sustainable farmstead cheesemakers including: the GAEC Ferme du Carregaut of Castelnau-Durban (Ariège), Mr. Wolfgang Bendick of Augirein (Ariège), and Mr. Herman Koeveringe-Clausen of Ustou (Ariège). She continues to be mentored in soil and crop management by organic market gardener Ms. Gitta Wulf of Les Jardins des Mondoux, Champagnac-la-Rivière (Haute-Vienne). Stateside training includes a 6-month creamery internship at the award-winning Jasper Hill in Greensboro, VT.
Phoebe holds a BPREA from the Centre de Formation Professionnelle et de Promotion Agricole Ariège-Comminges in dairy cattle science and cheesemaking and pursued further studies in dairy production technology at l'École Nationale d'Industrie Laitière in Aurillac under Jean François Combes and Cedric Albert.
Parros also has over 7 years experience in production management and marketing working in the entertainment industry supporting the efforts of big-name talent including Morgan Freeman and the New York Times bestselling author Neil Strauss.
