Hi all, thanks for visiting my page. I am a professionally trained barbecue chef, having studied under two of Americas' most prominent and celebrated pitmasters, Paul Kirk and Mike Mills.

Among my friends and influences in the industry is Sweet Baby Ray, who hand selected me to be be General Manager and pitmaster of his famed barbecue restaurant in Chicagoland.

I spent several years in Ireland, operating Mike's BBQ, a restaurant, catering and sauce/rub business.

I was the first to introduce these American flavors in Ireland, where it has grown into a current food craze, with several restaurants in Dublin and Cork specializing in American barbecue. These days in Ireland, the term "pulled pork" no longer elicits blank stares.

I now offer small, intimate barbecue and grilling classes in a casual and fun backyard atmosphere. where students are encouraged to bring their favorite barbecue beverages and enjoy an unparalleled gastronomic education in American slow food.
