Throughout his colourful career, Pittalis has held both Executive Chef and Head Chef positions at top Italian dining venues in his native Sardinia as well as Milan, Bordeaux, Dubai, China, Russia, Poland, Egypt and across the United Kingdom. Pittalis was the Head Chef of Cielo Restaurant in Birmingham, England, heading a team of 18 and responsible for the intricate workings of the kitchen. With a broad range of experience in hotel kitchens and independent restaurants, he has worked for the Ramada Hotel International in Coventry as well as the two-star Michelin restaurant.

Held in high esteem by industry peers, Pittalis' career highlights include winning the Young Chef of the Year in 2004, a European based chef's association and securing a gold medal at the Olympics for Food and Catering in 2001. As an outstanding honour in 2007, Pittalis was asked by BBC International to provide a televised food demonstration at the 'Good Food Show Birmingham'.
