I have spent years going to cheese festivals and enjoying cheese wherever my wife and I travel. I took an Alpine cheese class in the fall of 2014 and was hooked and excited by the prospect of trying my hand at cheese making. Success came quickly with Jarlsberg and Swiss cheese. I have been testing and comparing results from different milks and different cultures, in making of over 25 different cheeses. I have continued my education on-line and in the classroom. This year at the Weld County Fair, I held a 5-day cheese making demonstration encouraging the children of Weld County to utilize their dairy animals for cheese.
