Kimberly Emerson

Hello! In case you are wondering what my site is all about, this is my story!

I have been gluten free since 2006, mostly dairy free since 1996, and low FODMAP since 2014. Figuring out that I was lactose intolerant in 1996 was only the beginning of my sensitive digestive journey. I have known since childhood that I had a sensitive stomach. After the birth of my third child (2006), my body rebelled against me again. I did an elimination diet for the second time in my life (the first being in 1996) & felt much better after cutting out wheat & gluten. I sought out a GI doctor & was tested for celiac disease. The test was negative / inconclusive but the doctor declared me gluten sensitive & said I should stay away from gluten & dairy. I was formally diagnosed with IBS type D in 2009 & I have been on a low FODMAP diet since 2014 to help with my IBS symptoms. After embarking on the low FODMAP diet I found that I can tolerate small amounts of cheese, but not fresh dairy such as yogurt, kefir, cottage cheese, ricotta or sour cream. For more information on Low FODMAP go here because I am NOT an expert. http://shepherdworks.com.au/disease-information/low-fodmap-diet

My aim is to share with you recipes that have worked for me, are healthy, and have kept my tummy happy!
