My name is Stephanie Pedersen and I am the author of The Keto Kit, published by Sterling Books.

You may know me as a healthy living author who has written several books about superfoods, detox diets, and keto lunches.

But what you may not know about me is I am also low-carb eater who is fascinated by the changes I’ve seen in my own health while eating Keto.

I dove into the keto diet (about three years ago) really just to see what it was like. That’s it. I was still in the midst of my nutrition consulting practice when clients began coming to me with questions about the diet. Around the same time, I developed some joint pain and—curious to see if the anti-inflammatory claims about keto were true—I decided to try the diet for three months to see what it could do.

Wow. It was (and is!) the most difficult diet I’d ever played around with! (Which is saying a lot, considering I’ve done everything from the cabbage soup diet to the raw food to the rotation diet.)

Up until I went keto, I had advised my clients to stay away from fiddly food measuring, calorie counting, food logs, and the like, because I found that these made many of my clients food-obsessive. That was the opposite of what I wanted for them. (And, I am kind of lazy and don’t like to make people do extra work….)

But the keto diet was based around measuring: Measuring how many grams of this or that were in a food, as well as measuring how much of a food I was allowed to have in order not to throw my body out of ketosis. Then there was the constant need to check what I needed more of during the day: What had I already consumed enough of? Too much of? Not enough of? Oh, and let’s not forget that a keto eater has to know just how many grams of carbs (net carbs, specifically), protein, and fat, are in a food, has to closely read labels, measure water intake (as well as sleep and stress levels, and on, and on, and on. It’s enough to give someone an anxiety attack!
