I started my apprenticeship at Sydney’s reowned Italian restaurant, bel mondo. cooking under the watchful and guiding eyes of Steve Manfedi and his mother Franka, a true inspiration to the passion of cooking. I then went onto the richly endowed Rockpool group – Neil Perry. It was at Rockpool restaurant I was given the wonderful opportunity to train under one of Sydney’s finest dessert chefs, Catherine Adams.
Along my journey of cooking I have learnt how to make food subtle with balanced, clean flavours, finishing with a punch!
My philosophy on food is all about flavour and texture, using seasonal produce, with an emphasis on sustainability and strong support for our local providors!
