Hi my name is Jeanette, I live in New Brunswick. I was diagnosed with Celiac disease in Febuary 2013. I have spent the past few months learning everthing I can can about Celiac and Gluten sensitivity. Boy I had no idea what I was getting into. I already had some food allergies the worst being shellfish. At first I felt like life was over, I love food! My husband was worried as well, what will we eat, will we ever eat out again? At first we struggled, but the more I read and researched the more we realized hey we can do this. My life has done a full 360, we now eat gluten free, buy organic fruits and vegatables weekly and free range grain free beef, chicken and eggs. My body has learned it like these foods and if I get exposed to Gluten I spend 2 days recovering. I am the mother of a 12 year old and her diet has been inproving as well. I even have my two miniature Dachshunds eating grain free. My husband and daughter bought me a juicer for my birthday, love love love juicing. I have been plagued with medical problems my whole life and since changing my diet they have began to lessen or disappear. If you have any issues with gluten you know what I'm talking about. I have always loved cooking and experimenting with new foods and recipes. Since becoming celiac, I have began to think about everything that I cook and consume, reading every label, ingredient, and trying to keep my food as local as possible. The goal of this blog is to share what I have learned and continue to learn abou eating gluten free, organic, local and healthy. I am a stay at home mom, so I have more time to to do the leg work when it comes to researching and experimenting. I hope by following this blog you can find some useful information and hints that will help you to eat gluten free and healthy.
