I remember a time when I could eat anything and be totally stoked about it. Those were the good old days. And then I had baby number two and it all changed...
As it turns out, I had celiac disease lingering inside of me all along. It was just waiting to rear it's ugly head. And ever since it has, I'm the person as the restaurant with the special order and the allergy alert. Not only has it been a learning experience (gluten hides in everything!) but it's been a constant challenge to see which restaurants can really make a gluten free meal and which restaurants just don't get it. My stomach is usually acutely aware within 30 minutes.
I hope this blog helps out others with celiac who often face the same dilemmas...and who also long for a really great sandwich.
