Traditional baked mooncakes contain lotus paste and purple bean paste and may also contain salted egg yolks. Low-sugar mooncakes may use the traditional lotus paste instead of the purple bean paste. Alternatively, there will be sub-specialty types that replace the traditional lotus paste with durian pastry.
